Foodie Friday: Breakfast Cupcakes

Hello world! It has been a busy week for me, I have my job and I am also helping cover a friends shift! I have been busy in the craft room, just not much time to post!!! The weather is finally turning into spring, it has been nice to get some outside time.

Last week we had an event to go to and were asked to bring a breakfast dish. Well I know how to make breakfast, but not enough to feed about 15 people! So I searched the web and my frig the night before to find something, so I gathered my goodies, bits from pinterest and came up with Breakfast Cupcake! I was taking a chance because I had never made them since I was just winging it, thankfully they came out great!!!!

Breakfast Cupcakes

Eggs
Sliced Deli Ham
Salt
Pepper
Shredded Cheese

1. Preheat oven to 350-375 degrees.
2. Spray cupcake pan with nonstick spray.
3. Place 1 slice of ham in each cup.
4. Scramble eggs with salt, pepper and shredded cheese.
5. Take a couple of your measuring cups and put them on top of one of the cups of ham. Whichever one "fits" best will the amount of scrambled eggs you will add to each ham cup :)
6. Fill each ham cup with the amount of scrambled eggs.
7. Put filled cupcake tin in the oven for about 15-20 minutes or until eggs are cooked through.

Notes:
*Add milk to your eggs to make them fluffy!
*I am sure your wondering why aren't there any measurements on this recipe?! Don't panic! I made about 18 cupcakes with 7 eggs and 1/2 cup of cheese.
*Add some veggies too to make the eggs an omelet cupcake! Think tomatoes and spinach!
