Foodie Friday: Breakfast Cupcakes

Hello world! It has been a busy week for me, I have my job and I am also helping cover a friends shift! I have been busy in the craft room, just not much time to post!!! The weather is finally turning into spring, it has been nice to get some outside time.

Last week we had an event to go to and were asked to bring a breakfast dish. Well I know how to make breakfast, but not enough to feed about 15 people! So I searched the web and my frig the night before to find something, so I gathered my goodies, bits from pinterest and came up with Breakfast Cupcake! I was taking a chance because I had never made them since I was just winging it, thankfully they came out great!!!!

Breakfast Cupcakes

Eggs
Sliced Deli Ham
Salt
Pepper
Shredded Cheese

1. Preheat oven to 350-375 degrees.
2. Spray cupcake pan with nonstick spray.
3. Place 1 slice of ham in each cup.
4. Scramble eggs with salt, pepper and shredded cheese.
5. Take a couple of your measuring cups and put them on top of one of the cups of ham. Whichever one "fits" best will the amount of scrambled eggs you will add to each ham cup :)
6. Fill each ham cup with the amount of scrambled eggs.
7. Put filled cupcake tin in the oven for about 15-20 minutes or until eggs are cooked through.

Notes:
*Add milk to your eggs to make them fluffy!
*I am sure your wondering why aren't there any measurements on this recipe?! Don't panic! I made about 18 cupcakes with 7 eggs and 1/2 cup of cheese.
*Add some veggies too to make the eggs an omelet cupcake! Think tomatoes and spinach!

Overnight Peachy French Toast

1 Loaf of French Bread (8 oz)
8 Large Eggs
2 cups of Whole Milk
1/4 cup of Sugar
1 teasponn Vanilla Extract
2 Cans Sliced Peaches (15 oz)
1/2 cup Dark Brown Sugar
1/2 teaspoon Cinnamon
1/2 cup Heavy Cream
Butter or Canola Oil Spray for Pan

1. Butter/Spray 9 x 13 baking dish.
2. Slice french bread and arrange in flat layer in dish.
3. In bowl, mix well eggs, milk, sugar and vanilla. Pour on top of bread.
4. Drain peaches and arrange on top of bread.
5. Sprinkle brown sugar and cinnamon on top.
6. Cover and put in fridge overnight (minimum 8 hours)
7. Remove from fridge 30 minutes before baking.
8. Preheat oven 350F.
9. In small pan bring cream to boil and reduce by half (about 10 minutes). Drizzle over peaches.
10. Bake uncovered for 45-55 minutes.
11. Let cool and enjoy!

Notes:
*We go to the military supermarket french bread not available :P so I used some older regular sliced bread. When I say old I don't mean moldy just not fresh :)
*If using different bread it takes a little longer to cook!
*Since I'm just cooking for me and hubby lots of left overs!
*This dish is so YUMMY!
*For a side items I just made bacon while it was cooking and it was perfect!

I hope you all enjoy the recipe! Try it out and let me know what you think! Just looking at this picture makes me want to remake this! Hmm :)
