Foodie Friday: No Bother Chili

Been an interesting week as I handle being a Lymie and the antibiotics. I was able to spend some time in my craft room and I have been organizing my stamps. Its a never ending process, but I think I got a good system set up :)

Here is one of my favorite recipe's, No Bother Chili. You can eat this by itself or with nachos, hubby likes it with pasta, but thats not my thing :D This is making me hungry just typing about it!

K (heart) Studio Chili Recipe

No Bother Chili

1/2 - 1 Pound Ground Beef
1/2 Large Onion
1 Cup (8 oz) Tomato Sauce
2 Cups (16 oz) Diced Tomatos 
1 Tablespoon Chili Powder
1 Can (15 oz) Dark Kidney Beans
1/2 Tablespoon Worcestershire Sauce

1. In a large pot, brown the ground beef and drain.
2. Add the remaining ingredients.
3. Bring to a boil.
4. Lower temperature and simmer for about 15 minutes.
5. Let cool and enjoy!

Notes:
*The ground beef amount doesn't have to be exact, if you have less on hand or like less, then thats ok :)
*Don't forget the sides: Sour cream, crackers or cheese!
*Got Leftovers? I freeze the remaining for another day.
*This recipe is great on nachos, hot dogs or anything you like.

Chicken Broccoli Pasta

Happy Friday! This week has flown by and I have my first craft fair this weekend. I have been finishing up some orders and getting ready for the fair. Worked on some design team projects and I will share them next week. So today is all about getting ready for the craft fair! yay! Hope everyone has a great weekend!!! Happy Art Making :-)

Chicken Broccoli Pasta

8 oz Pasta
1 Cup Broccoli
2 Tablespoons Butter
1/2 Cup of Milk
1/2 Cup Parmesan Cheese
1/4 Teaspoon Pepper
1 1/4 Chicken Breast
1 Can Cream of Mushroom Soup

1. Prepare pasta as you normally would, make sure to cook in a large pot. 
2. In the last couple minutes of cooking add broccoli. 
3. Drain pasta and broccoli  and return to large pot.
4. Cut chicken into small cube like pieces. 
5. In separate pan heat butter and cook chicken throughly. 
6. Add chicken to pasta pot. 
7. Add remaining ingredients to pasta pot and cook until mixture is hot. 

Notes:
*This recipe was super easy and hubby loved it! 
*I added some of my favorite seasoning to the chicken.

Foodie Friday - Nachos

We have had a couple of busy weekends and looking forward to a lazy weekend! I am back this week with Foodie Friday and this works out perfectly for a do nothing type of weekend! I call them the quick easy nachos! Hubby loved them and I love how easy they were to make!

I have not had much time to get into my craft room, went to help my mom move to another state, pweh that was alot. But I got to go craft shopping and I got tons of goodies. I even picked up my sewing machine! So excited to finish cleaning up the craft room and play with my new toys!



Quick Easy Nachos

1/2 bag of corn chips
1/2 can refried beans
1/4 onion chopped
Salsa
Ground Beef (precooked in taco seasoning)
Mexican Cheese

Extra for toppings if desired: Sour Cream or Guacamole! 

1. Lay chips in large tray or glass container (must be oven safe). 
2. Plop small scoops of the refried beans all over the chips.
3. Spread ground beef on top of beans.
4. Sprinkle onions on top of beef. 
5. Spread salsa on top and then cover with cheese! 
6. Bake at 350 about 15 min or till cheese is melted. 
7. Scoop on to plates, add desired toppings and enjoy!

Notes:
*The measurements do NOT have to be exact for this recipe. If you have 1 whole can of beans and your family likes them, go ahead put them all on! Not a fan of salsa try some tomatoes instead. like olives add them too! 
*I've learned that kids love to help with cooking, have your little ones add the cheese or put the chips in! Make it a fun night and watch Nacho Libre while your at it ;)

Foodie Friday: Meatballs

I recently made these and another hubby favorite! Since its just the two of us, there is lots of leftovers with this recipe! This recipe can easily go with any pasta and a side dish or for meatball subs!!! I included some in the process pictures, so you can see how the recipe goes along. Its super easy to make and I hope you will give it a try. Let me know how it works out and share your pictures too!




Meatballs

1.5 pounds Lean Ground Beef
3/4 cup Bread Crumbs
1 small Onion
1 Egg
1/2 cup Milk
2 tbsp grated Parmesan Cheese
1 tsp dried Oregano
1/4 tsp Pepper
1 tsp Salt

1. Preheat oven to 350 degrees.
2. Dice onion and put into mixing bowl.
3. Add egg and milk to bowl and mix well.
4. Add ground beef, bread crumbs, cheese, oregano, salt and pepper to bowl.
5. Mix with hands or fork. 
6. Spray non stick cooking spray on a baking sheet.
7. Form small balls with the meat mixture and place on baking sheet.
8. Bake for 20-30 minutes till golden brown and cooked throughly. 

Notes:
*This recipe makes a ton of meatballs. I only made about 12 meatballs and saved the remaining of the meat mixture for later in the week for meatball subs! 
*Make sure you dice/cut the onion into little pieces :) 
*Don't overmix the meat mixture or your meatballs will be turn out tough.
*Cloudy with a Chance of Meatballs 2 just came out at redbox, turn this meal into a cute date night with hubby or have the kids help make the meatballs and make it a family date night!
