Foodie Friday: Cilantro Chicken

Happy Friday!!!!

So far I spent some time at The Creative Nook, finishing up some design team creations and helping around the store! Puppy had a play date and we meet a new friend! And now its time for Foodie Friday!

This is a super easy quick recipe and yummy! We had it with rice and black beans. I think it would be really good in taco's hmmm hmm hmm good!

In the pan! 

Yum Yum! 

Cilantro Chicken

2-3 Chicken Breast
3-4 Limes
4 Garlic Cloves
Olive Oil
Cumin 
Chili Powder
Cilantro

1. Cut chicken breast into chucks. 
2. Add enough olive oil to the pan to cook the chicken. 
3. Add chicken to pan. 
4. Add desired amounts of seasoning to chicken. 
5. Cook and mix chicken and add limes juices. 
6. Enjoy!!!! 

Notes
*There is no amounts on the seasoning because we all like or don't like certain seasonings. I don't like spicey so I added less chili powder. 
*Still not sure on the amount, once the chicken is in the pan, sprinkle the seasoning on the chicken till its got a good layer on it. 
*I don't ever have limes in the house but I do have lime juice so I used that instead :)

Foodie Friday: Tortilla Burrito Bowl

Happy Friday I am back with a yummy recipe! It has been crazy here as we started private swim lessons. I am really enjoying it and I get to see some of my favorite munchkins! I am going to keep this sweet and simple! The bowls can be made with all types of fixings, let me know what you would put it?!

Filling Choices for Burrito Bowls ! 

Burrito Bowls without the Bowl ;-)

Heart shaped Burrito Bowl :D

Tortilla Bowl 

Flour Tortillas
Oven Safe Bowl or Cake Pan 

1. Preheat oven to 350-375 degrees.  
2. Spray non stick spray on bowl or cake pan. 
3. Press tortilla into bowl or cake pan. You may need to bend/mold it a bit depending on your bowl shape.
4. Cook for about 10-15 till brown and toasty. 

Burrito Bowl Fixings

Mexican Cheese or cheese of choice
Sour Cream
Tomatoes
Rice
Corn
Salsa
Black Beans or beans of choice
Refried Beans
Onions
Lettuce

Ground Beef is cooked with Taco Seasoning Package.

Chicken is cubed, cooked with half a Taco Seasoning Package and Lime. 

The fixings are what you and your family like! As you can see above in the pictures there are lots of different ways to enjoy the bowls!

Foodie Friday: Cornbread

Hello and I am back! I took some time off to get my rest and get better. I am still not feeling 100% but I missed being crafty, my blog and blog friends :) Thank you everyone for the kind messages to check in on me.

So today I am up with Foodie Friday! The last recipe was chili and what doesn't go better with chili than cornbread. Just typing this up makes me want to make some more!

K (heart) Studio Foodie Friday Cornbread

Cornbread

1 1/3 Cups Yellow Corn Meal
1 1/2 Cups Flour
3/4 Cup Sugar
1 1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 1/2 Cups Buttermilk
3 Eggs
6 Tbsp Butter (melted)

1. Preheat oven to 425 degrees. 
2. Spray 8 inch baking pan. 
3. Mix all ingredients in bowl and combine well. 
4. Pour batter into pan, spread evenly.
5. Cook for 30 minutes or until brown on sides.

Notes
*I used milk instead of buttermilk, well because I didn't have any :) 
*I ended up using a smaller pan so it took longer to cook and still couldn't get the middle to cook. So I would say the larger the pan the better.

Foodie Friday: No Bother Chili

Been an interesting week as I handle being a Lymie and the antibiotics. I was able to spend some time in my craft room and I have been organizing my stamps. Its a never ending process, but I think I got a good system set up :)

Here is one of my favorite recipe's, No Bother Chili. You can eat this by itself or with nachos, hubby likes it with pasta, but thats not my thing :D This is making me hungry just typing about it!

K (heart) Studio Chili Recipe

No Bother Chili

1/2 - 1 Pound Ground Beef
1/2 Large Onion
1 Cup (8 oz) Tomato Sauce
2 Cups (16 oz) Diced Tomatos 
1 Tablespoon Chili Powder
1 Can (15 oz) Dark Kidney Beans
1/2 Tablespoon Worcestershire Sauce

1. In a large pot, brown the ground beef and drain.
2. Add the remaining ingredients.
3. Bring to a boil.
4. Lower temperature and simmer for about 15 minutes.
5. Let cool and enjoy!

Notes:
*The ground beef amount doesn't have to be exact, if you have less on hand or like less, then thats ok :)
*Don't forget the sides: Sour cream, crackers or cheese!
*Got Leftovers? I freeze the remaining for another day.
*This recipe is great on nachos, hot dogs or anything you like.

Chicken Broccoli Pasta

Happy Friday! This week has flown by and I have my first craft fair this weekend. I have been finishing up some orders and getting ready for the fair. Worked on some design team projects and I will share them next week. So today is all about getting ready for the craft fair! yay! Hope everyone has a great weekend!!! Happy Art Making :-)

Chicken Broccoli Pasta

8 oz Pasta
1 Cup Broccoli
2 Tablespoons Butter
1/2 Cup of Milk
1/2 Cup Parmesan Cheese
1/4 Teaspoon Pepper
1 1/4 Chicken Breast
1 Can Cream of Mushroom Soup

1. Prepare pasta as you normally would, make sure to cook in a large pot. 
2. In the last couple minutes of cooking add broccoli. 
3. Drain pasta and broccoli  and return to large pot.
4. Cut chicken into small cube like pieces. 
5. In separate pan heat butter and cook chicken throughly. 
6. Add chicken to pasta pot. 
7. Add remaining ingredients to pasta pot and cook until mixture is hot. 

Notes:
*This recipe was super easy and hubby loved it! 
*I added some of my favorite seasoning to the chicken.

Foodie Friday: Breakfast Cupcakes

Hello world! It has been a busy week for me, I have my job and I am also helping cover a friends shift! I have been busy in the craft room, just not much time to post!!! The weather is finally turning into spring, it has been nice to get some outside time.

Last week we had an event to go to and were asked to bring a breakfast dish. Well I know how to make breakfast, but not enough to feed about 15 people! So I searched the web and my frig the night before to find something, so I gathered my goodies, bits from pinterest and came up with Breakfast Cupcake! I was taking a chance because I had never made them since I was just winging it, thankfully they came out great!!!!

Breakfast Cupcakes

Eggs
Sliced Deli Ham
Salt
Pepper
Shredded Cheese

1. Preheat oven to 350-375 degrees.
2. Spray cupcake pan with nonstick spray.
3. Place 1 slice of ham in each cup.
4. Scramble eggs with salt, pepper and shredded cheese.
5. Take a couple of your measuring cups and put them on top of one of the cups of ham. Whichever one "fits" best will the amount of scrambled eggs you will add to each ham cup :)
6. Fill each ham cup with the amount of scrambled eggs.
7. Put filled cupcake tin in the oven for about 15-20 minutes or until eggs are cooked through.

Notes:
*Add milk to your eggs to make them fluffy!
*I am sure your wondering why aren't there any measurements on this recipe?! Don't panic! I made about 18 cupcakes with 7 eggs and 1/2 cup of cheese.
*Add some veggies too to make the eggs an omelet cupcake! Think tomatoes and spinach!

Foodie Friday: Parmesan Crusted Chicken

Whoa I can't believe its Friday already, I started my new part time job and puppy is doing better. I am still adjusting to getting back to work and making everything else work :)

I am up today with an easy recipe, that I hope you will all enjoy! We really liked it and there was only 1 piece left over for the next day! Now lets get to the good stuff :D

 

Parmesan Crusted Chicken

1/2 Cup Mayo
1/4 Cup Parmesan Cheese (grated)
4 Tsp Bread Crumbs
4 Chicken Breast
 
1. Preheat oven to 450 degrees.
2. Mix mayo and parmesan cheese in bowl.
3. Spray baking sheet with non stick cooking spray.
4. Arrange chicken on baking sheet.
5. Spread mayo/cheese mixture on chicken.
6. Sprinkle bread crumbs over each piece of chicken.
7. Bake for 20 minutes or till chicken is cooked thoroughly.
 
Notes:
*I only used 2 large chicken breast cut into thirds and there was about 1/4 of the mayo/cheese mixture remaining.
*It was a little tough to spread the mayo/cheese mixture cause the chicken was so moist, I will probably pat down before spreading the mixture on.
*I served with whole grain pasta (buttered) and veggies!

Foodie Friday: Chicken Cordon Bleu and Sauce

Whoa Friday already! Is the time just flying by or is it me? Had some last minute request and there is a stomach bug going around, hubby caught it and I cleaned/washed like crazy to make sure I didn't! Knock on wood I am safe :)

Here is today Foodie Friday, Chicken Cordon Bleu with Sauce. So yummy and easy! I am all about quick recipe that I can toss in the oven and multi task.

Chicken, Ham, Cheese, Bread Crumbs and Tada!

Don't forget the sauce! 

Chicken Cordon Bleu

3 Chicken Breast
10-12 Slices of Deli Ham
3-4 Slices of Swiss Cheese
1 Cup Italian Bread Crumbs

1. Preheat oven to 350 degrees.
2. Grease baking dish. 
3. Cut chicken breast in halves to make them thinner, so you have a total of 6 chicken breast. 
4. Place the chicken in the backing dish. 
5. Layer ham and then cheese. 
6. Sprinkle bread crumbs over entire dish.
7. Bake for 30 minutes or until chicken is cooked through! 

Notes:
*Chicken produces a lot of moisture so I added some flour to suck up that moisture.
*If your family isn't a fan of swiss cheese feel free to switch to one you all like :) 

Chicken Cordon Bleu Sauce

2 Tablespoons of Butter
2 Tablespoons of Flour
1 Cup of Milk
1/2 Teaspoon of Salt
1 Tablespoon Mustard
1/2 Teaspoon Worcestershire Sauce
1/2 Cup Parmesan Cheese

1. Melt butter in a small pan.
2. Add flour and stir for about 2-3 minutes. 
3. Add milk and continue stirring. 
4. Add salt and keep stirring! 
5. Sauce will begin to thicken, it should take less than 5 minutes. 
6. After sauce is thick remove from heat. 
7. Add mustard, worcestershire sauce and parmesan cheese.
8. Continue stirring till everything is mixed well together. 
9. Tada all done and serve with chicken cordon bleu.

Notes:
*This recipe makes a lot for just 2 people, so I would probably cut it in half next time I make. 
*This recipe is an altered version from The Girl Who Ate Everything. She also has a different take on how to make chicken cordon bleu.

Mason Jar Recipe Tags

I made these for a friend/customer and it was the first project that get me started on my venture to have a side business! They came out so cute! I want to make these this year for Christmas gifts! I haven't been able to find the final pic of them on the jars but if I find it I will post it! I made them in word and printed them on cardstock ;) I hand cut them, pweh!

Side note we had a fun weekend! We took our fur baby to the dog festival and so excited for the things that will be coming up for him! More to share later on ;)

Foodie Friday: Crockpot Chicken Fajitas

Happy Friday!!! This week has seriously flown by! I am hoping this month slows down some hehe :) I've gotten my blog planner almost finished and can't wait to show you all! This week I am here with my first crockpot recipe. I love love crockpots, got my first one as a wedding gift. This one is super quick and I'm sure you could prep it way in advance. Let me know if you try it out and how it works out ;-)

Step by Step ;)

Crockpot Chicken Fajitas

1 Onion
2 or 3 Bell Peppers (any color)
1 package of Taco Seasoning Mix

Totillas and your choice of toppings!

1. Cut onion and peppers and place on bottom of crockpot.
2. Place chicken on top of vegetables. 
3. Use entire package of seasoning on top of chicken. 
4. Cook on low for 4-5 hours. 

Notes:
*Chicken will look burnt when done but thats just the seasoning :) 
*When all done the chicken will cut/shred apart very easily. 
*Don't forget chicken has lots of moisture and there will be some liquid at the bottom of the crockpot. No worries just leave it and make sure not to scoop it out with the chicken/veggies ;)

Foodie Friday - Nachos

We have had a couple of busy weekends and looking forward to a lazy weekend! I am back this week with Foodie Friday and this works out perfectly for a do nothing type of weekend! I call them the quick easy nachos! Hubby loved them and I love how easy they were to make!

I have not had much time to get into my craft room, went to help my mom move to another state, pweh that was alot. But I got to go craft shopping and I got tons of goodies. I even picked up my sewing machine! So excited to finish cleaning up the craft room and play with my new toys!



Quick Easy Nachos

1/2 bag of corn chips
1/2 can refried beans
1/4 onion chopped
Salsa
Ground Beef (precooked in taco seasoning)
Mexican Cheese

Extra for toppings if desired: Sour Cream or Guacamole! 

1. Lay chips in large tray or glass container (must be oven safe). 
2. Plop small scoops of the refried beans all over the chips.
3. Spread ground beef on top of beans.
4. Sprinkle onions on top of beef. 
5. Spread salsa on top and then cover with cheese! 
6. Bake at 350 about 15 min or till cheese is melted. 
7. Scoop on to plates, add desired toppings and enjoy!

Notes:
*The measurements do NOT have to be exact for this recipe. If you have 1 whole can of beans and your family likes them, go ahead put them all on! Not a fan of salsa try some tomatoes instead. like olives add them too! 
*I've learned that kids love to help with cooking, have your little ones add the cheese or put the chips in! Make it a fun night and watch Nacho Libre while your at it ;)

Foodie Friday: Meatballs

I recently made these and another hubby favorite! Since its just the two of us, there is lots of leftovers with this recipe! This recipe can easily go with any pasta and a side dish or for meatball subs!!! I included some in the process pictures, so you can see how the recipe goes along. Its super easy to make and I hope you will give it a try. Let me know how it works out and share your pictures too!




Meatballs

1.5 pounds Lean Ground Beef
3/4 cup Bread Crumbs
1 small Onion
1 Egg
1/2 cup Milk
2 tbsp grated Parmesan Cheese
1 tsp dried Oregano
1/4 tsp Pepper
1 tsp Salt

1. Preheat oven to 350 degrees.
2. Dice onion and put into mixing bowl.
3. Add egg and milk to bowl and mix well.
4. Add ground beef, bread crumbs, cheese, oregano, salt and pepper to bowl.
5. Mix with hands or fork. 
6. Spray non stick cooking spray on a baking sheet.
7. Form small balls with the meat mixture and place on baking sheet.
8. Bake for 20-30 minutes till golden brown and cooked throughly. 

Notes:
*This recipe makes a ton of meatballs. I only made about 12 meatballs and saved the remaining of the meat mixture for later in the week for meatball subs! 
*Make sure you dice/cut the onion into little pieces :) 
*Don't overmix the meat mixture or your meatballs will be turn out tough.
*Cloudy with a Chance of Meatballs 2 just came out at redbox, turn this meal into a cute date night with hubby or have the kids help make the meatballs and make it a family date night!

Foodie Friday - Spanish Chicken

Hello everyone! With the new year came some new goals for me and one of them is to post some of my favorite recipes! Every Friday will now be Foodie Friday! I am a total visual person, so there will always be a picture and of course the recipe! I hope you will try it out and let me know how it goes!

That brings us to today's Foodie Friday! A favorite at the house, we have this at least once a week, per hubby request! We both love spanish food so I never argue about having this at the house ;) Tada here is it Spanish Chicken Seasoning Recipe!


Spanish Chicken Seasoning Recipe

1 teaspoon Salt
1 teaspoon Garlic Powder
1/2 teaspoon Ground Cumin
1/4 teaspoon Black Pepper
1/4 teaspoon Chili Powder

1. Put all the ingredients in a small shallow bowl and mix together.
2. Dip chicken pieces in bowl (make sure you get both sides)
3. In a large sauce pan put some oil (I probably don't use more than a tbsp) and bring stove to low heat. Add chicken and cook till no longer pink inside, flip the chicken occasionally! 

Notes:
*The recipe will cover probably 3 chicken breast (depending on there size).
*This seasoning mix has a big kick of flavor, so if you like things more subtle only season one side of the chicken.
*I like to cut the chicken breast into pieces, so I double the recipe. 
*If doubling the recipe DO NOT double the salt, we use sea salt and I found that the chicken comes out way to salted.
*If you want to recreate the meal in the picture this is how I cook everything so its all ready at the same time. I cook the rice first it takes about 15-20 minutes, while thats cooking I cut up the chicken and season it. Also I cut up the onions for the beans and tomatoes for the side dish! By this time the rice is ready and I start the chicken. I start sauteing the onions, flip the chicken and then add the beans to the onions. I keep the beans on a low setting so I can keep my eye on the chicken and by the time the chicken is done its all good to go!
